Two key items arrived in the mail today for the trip to Brasil:
Tropical Tango Vega Smoothie powder and my first order of Cotter Healthy Bites! So excited.
The all-you-can-eat meat (Churrascuria) and pizza restaurants were two of my very favorite things about Brasil, but, sadly–mostly about the pizza–neither one works with gluten-free vegan eating. And I’m not about to make myself sick pre-race.
Sooo I will bring as much of my own stuff as I can. Last year Amanda and I lived off of acai bowls, and I will have to take credit for turning them into protein acai bowls by adding the Tropical Tango Vega that I had with me—the flavor combination is perfect.
My challenge this weekend is to avoid consuming three orders of Healthy Bites before my departure on Monday. The idea was to take them with me so that I have gluten-free, vegan protein goodness to snack on while I travel, but I have definitely already made a dent in them today . . . So good and handmade by Lindsay Cotter, wife of pro triathlete James Cotter, in Austin; she created these bites as a healthy snack for him! I sent a little Cotter Healthy Bites Friday surprise to Mini Biscuit (also gluten-free and vegan) at the office today and she loved them too.
Here is where you can order them. I know I will be back for seconds!

Best of luck in Brazil!
Those bites look amazing, what kind of protein does she use for your vegan bites?
vega, of course!:)
YIPPPPEEE!!!! This makes me so happy! and I used vega. the new smoothie blend IS AWESOME! i love the vanilla almond too. The good thing about the healthy bites you ordered is that they are very nutrient dense but around 35-40 caories. So pop in 4 to 5 and its like you ate a vegan bar, ya know? So glad they arived today. phew!
Looks like your mail is kind of the same as mine. Expecting Lindsay’s Vegan Healthy Bites and Vega Smoothie Powder within the next few days too. Ha! Rock it out in Brazil!!
good luck in Brazil!
Lindsay does rock
insanely jealous of the healthy bites delivery.
enjoy the bites!!!
And those acai bowls look so yummi. I’ve never tried them, are they a brazilian speciality?
IM Brazil sounds like a great race to do. Good luck with this one
yes, definitely a brasilian specialty, although acai bars seem to be popping up in a lot of southern california locations too! and there is a great one in kona.
