Good reads.

I’ve been meaning to share an article that my friend Susan wrote for No Meat Athlete about veganism and exercise-induced asthma. If you have been reading here for awhile, you probably know that asthma is something that I have struggled with since childhood. Susan interviewed me for this article about how decreasing/ cutting out dairy from my diet has affected my asthma. Check it out here.

And while I am at it, I want to share another good read—it isn’t new, but I just stumbled upon it on one of my fave websites, MindBodyGreen. I told you recently about our awesome lunch and meeting with Rich Roll and his family; in this article he shares his go-to sources for plant-based protein. If I had a nickel for every time someone asked me how I get my protein . . . Rich shares the secrets here.

Funny that you just wrote this, Hillary… I watched the film “Forks over Knives” last night and commenced my first day of vegetarianism today. After reading this, I may dive into veganism while I’m at it! (Will confess though, I’m a little intimidated).

I developed asthma and EIA after my second IM and had major trouble managing it for almost 2 years. I’ve figured it out for the most part now, but still have flare-ups, so I’m definitely intrigued! I’ll certainly keep an eye out for your recipe and meal ideas over the next several weeks.

krysten! do let me know how you go with the asthma if you end up cutting out dairy. my diet had been really high in dairy so i found the difference to be huge! if you go under the “nutrition” tab at top, you can check out the recipes i’ve posted thus far…

You’ll be glad to know that whilst I’m a full on carnivore I’ve started adding some vegetarian meals here and there throughout the week just to add variety to my diet. I particularly like marinated tofu and have even discoveted a lentil/quinoa/bean combo in the supermarket that I’m partial too.
Imagine my surprise when my hubby asked if we could have a veggie dinner one of these days! We try different recepies at the weeken, a past time of ours as we like cooking.
So the key for me is “I’ll try anything as long as it’s healthy” and “keeping it varied”. Thanks for all your food/recipe sugestions I always enjoy reading them :-) .

ooh i love this, lucy! every meal or day we can go without meat is a drop in the bucket for the environment–every little bit helps! :)

So many things I love about this post. Worlds colliding!

I can attest that you really did have crazy asthma (crasthma?) as a kid and always had to clear your throat and didn’t. Not that anyone doubts you. I like being “in” on this.

I concur!! please??? ohh that would make me so happy to read that post—going to Olympic swim trials for the USA is freakin amazing. 2:42 in 200BR…in the event w/ people like Kristy Kowal and Amanda Beard and Megan Jendrick. I actually thought of you while watching coverage this week—I’m w/ Kerry on this request! and if you are too busy being smashed in the mountains, I’m sure that we could come up with questions for you to answer…or interview you and I’d type up your responses.

omg kids i wish i could but we don’t have TV in the cabin! found it on the internet but literally have not been home to have time to watch. sad but true!! i think i may have to watch it all after the fact if i have time to chill out between ironmans in a couple weeks.
and bre, 2:42 was a training-level time….that was a horrific swim. my PR was a 2:33 :(

coverage hasn’t been great…CTV is showing more American athletes than Canadian and NBC is showing swimming and gymnastics and beach volleyball.
there are a few good races for sure that could help pass the time between IM’s…or you could sleep. I’d pick sleep. ;)
okay…legit to be sad about the 2:42 when the PR was 2:33, BUT i hold my ground on it being freakin amazing. I can say this because that’s as fast as my 200 freestyle was in my last year of varsity…and just getting to swim at oly trials is an incredible accomplishment.

Hi Hillary,

I think you would appreciate that I managed to both enlighten and satisfy my Texan in-laws tonight with my protein and flavor packed veggie feast! They had their first voyage with Kale, Quinoa, and Polenta tonight…Minds were blown!!!
