Soooo in case you didn’t notice, much of this “cooking” I’ve been so excited about now that we are home doesn’t actually involve cooking. I am still pretty lazy and unskilled in that area, and hey, I figure we maximize the nutritional value of fruits and veggies by not cooking them, so why take the time?!
If you’ve been reading her for awhile, you know I’m obsessed with my Vitamix and making VEGA shakes in there. I know I am a bit late to the party on this one, but this week’s discovery is soup in the Vitamix. Sunday night our friend and super-athlete Paul “Keepin’ it Lean” Thomas whipped up a veggie extravaganza for us at his house (this was SO nice because he isn’t even a vegetarian) and the feast included an amazing soup that he blended up from scratch . . . He never uses recipes, and since I have a hard time reading instructions, I figured even I could do this!
I was inspired. I dumped the above + a can of black beans, a handful of walnuts, and a bunch of garlic salt into the blender . . .
If you let that Vitamix go for awhile, you don’t even need to heat the soup any further! That’s what I did and this is what came out. We added some fire-roasted corn on top and YUM. We were too full to eat part two of the dinner.
