I realized that it had been at least a week since I had posted about FOOD, so today I have some recent eats for you!
Thai sweet potato-coconut-carrot curry soup . . . Courtesy of the Vitamix again, with help from Mini Biscuit.
Cashew-coconut quinoa: such a simple twist on an old favorite, and it was awesome (just substitute a can of coconut milk for a part of the water before cooking and add crushed cashews!) We ended up adding this to the soup.
Zucchini with curry and sea salt—the rest of our feast with Mini, Dr. Muffin, and Aunt Sammy. I also made gluten-free-vegan choc chip cookies from scratch but was missing xanthan gum so they were a bit of a mess—still good!
Extra-large margaritas for girls’ night in the Dirty T last week . . . Pint glass for perspective.

I miss her already! We did the hand-off to Grandpa at LAX for babysitting duty today; Missy Moo will be spoiled for the next 2.5 weeks while Mom and Dad are in paradise.
